CALM AFTER THE STORM

The Evening of the Santa Visit gave me a chance to reflect on the good side of the holiday. I proceeded to take 2000mg of Vitamin D, thinking I need something to help my mood that was legal...LOL.

I then pulled down my christmas decorations and my children reminded me of something, the excitement of decorating the tree. I then started to remanise and it brought me back to christmas of 1988 when I was 8 years old. I loved christmas this year and got to help hang decorations in our Burbank, WA home. We had this huge fireplace in this oversized livingroom where we got to hang the stockings above the fireplace. I learned in school that year about "christmas around the world" and how the tradition of sticks getting placed in stockings came to be. That christmas we also tolk part in a living nativity with the church.

The things that make christmas special IS traditions. The traditions of decorating the christmas tree and putting the star on the top, making cookies, singing carols, and learning about christ are things that stick with your children...IT'S NOT THE PRESENTS. Even though, christmas of 88' I do remember waking up christmas morning and looking out the huge glass window in the livingroom and seeing Santa brought us a trampoline. We all ran out in our pajamas to get the first jump! Do you remember that? And then, mom told us all she was pregnant with Jordan. I remember that christmas like it was yesturday, but I'm going to tell you, I don't remember the presents.
So as you are all out Spending your christmas money on your kids, maybe you should spend more time on Traditions and the true feeling of christmas. It's a great opportunity to look in the paper and see all the activities going on in your area.
I am so greatful I get to share good quality time with my children and stay at home to see them turn into loving children.

The Nightmare Santa Visit

10:15am:I was cleaning the kitchen and heard on the radio that santa was flying in on a helicopter at 11am. I quickly put down my dish rag and got the kids ready. They had to look nice too because there were pictures with Santa after his arrival. So, Trey needed a haircut badly because he got a hold of scissors last Sunday and cut a big chunk of his hair out (as you can see in the thanksgiving portraits).

Before I new it, it was already 11 and we didn't make it to santa's arrival, but we could still make it to santa. The kids were all dressed in their Christmas dresses and hair all done. I was excited.
I walked in the door to the mall and there was a huge line...so what did I do? I had to stand in the line, we were already there. And the line moves so slow!

20 minutes passed and the line was moving enough that we were in the middle. Mattie was not...LET ME REPEAT...NOT HAVING FUN. She didn't want to be held, but yet I couldn't let her down. She SCREAMED, KICKED, EVEN BIT ME! I PUT HER ON MY SHOULDERS AND SHE PULLED MY HAIR OUT. I was completely embarrassed and didn't know what to do....except CRY....yes, I broke down and cried right there in the line...
To make matters worse, I told the kids lets go home and Morgan started to cry saying "Santa, Santa, I want to see Santa!" If I wasn't embarrassed then, I definitely was the center of attention as a struggling mom.
12:30pm: Got the kids up to Santa to sit on his lap. I got ready to take a picture for this blog and the lady says "Sorry, no pictures. You can buy them for 7.00 though" ARE YOU SERIOUS! Of course this is a credit card world and I don't have any cash. I even asked if I could stand out in the hall and take a picture but she said no. I didn't want to make anymore of a scene...so I just THOUGHT everything I wanted to say to that lady, but didn't say it. Plus she was an elf
AS I WAS LEAVING THE MALL: Mattie ran from me. I had to put her down, we were finally out of the line...but she ran from me. I proceed to catch her and I snagged her arm. She tried to escape by making her body limp and then, her hand slipped out of mine and her face smashed into the ground. BLOOD WAS GUSHING OUT OF HER NOSE AND RUNNING ALL OVER.

YEAH, YOU COULD SAY IT WAS MY NIGHTMARE SANTA VISIT AND I NEVER WANT TO GO BACK TO THAT TIME AGAIN.

Thanksgiving 2008

I was anticipating a very hard thanksgiving, since we are alone without extended family for the first time. I grew up with 6 brothers and sisters and have so many holiday memories with them. It would be hard on anyone, I'm no special circumstance.
So after a lot of tears last week, I changed my attitude and looked at it as creating new memories with my family.

This year, we soaked our turkey in a salt brine for 24 hours. Then we smoked our turkey with our cook shack. Andy got up at 4am to put it on the smoker and then went back to bed.
The day started out very calm. I made biscuits/gravy for breakfast, cleaned up the kitchen, then proceeded to make the dinner. At 10:30am I started makeing pies. Peach first then apple. Then I made 2 pumpkin rolls and a chocolate cheesecake pie. Before I knew it, I had made more desserts than I needed. Oh, well.
For the dinner, I made a green salad, sweet potatoes, green beans, store bought rolls, cranberry sauce, and corn. The turkey got done around 4pm. 12hours to cook the turkey, but let me tell you, it was by far the best turkey I have ever had in all my 28 years of life.
I really think Mattie out ate everyone. She loves her food. This was her actual first thanksgiving and it was entertaining to watch her eat. She shovels the food into her mouth! She's so skinny too that I really don't know where it all goes. This is one thing that I will never forget about her is that she eats extremely well.I am very thankful for Trey in my life. My only boy. I am thankful to have his sweet spirit around. And thankful that he is a huge help around the house. Last week I woke up and to my surprise, he had cleaned the frontroom and unloaded the dishwasher. There was a little heart on each task he completed that said"Done in love". This is my boy, always thinking of others.
I am thankful for Morgan also. She loves to look pretty and give mom hugs. She is thankful for her dog Duke, her mom and dad, her trampoline, her friends, coloring crayons, and church. After the thanksgiving feast, we sat on the couch and watched the football game...ok, Andy did and I enjoyed a hot cup of holiday spice. It is the best holiday drink, I will post the recipe soon. Just relaxing with the family and enjoying good, quiet times together. One thing that was special was being able to cook with Andy. I really enjoy that time working together.

AND THE COUNT DOWN BEGINS...DON'T LOOK SO HAPPY ANDY, IT'S JUST CHRISTMAS!

Hot Tamales!!

I have a complete appriciation for the hispanics now and the work they put into their cooking. We love tamales but never imagined how much is actually put into makeing them. So, I decided to give you a visual walk through of the process.
Day Before: Cook up 5 pounds of beef and 5 pounds of pork. Then shred into pieces.
8am: Start making the meat mixture. This consists of browning flour and adding chilli powder. It gives it that sticky texture that is inside burritos sometimes.

10am: Making the masa dough. This tolk us about 1 hour to get it to the right texture and look how much it makes. It almost fills up a 10 gallon bucket so a lot of the mixing is by hand...ok maybe you can say it was a full workout.
In the end, it is a paste like dough...the blender didn't work very well after a while. So then it is time to wrap them.
12:00pm: Wrapping them in individual husks, adding the meat, and sealing them. What a process. But in the end at 4pm, we completed 78 tamales.

The joys of learning something new is learning the appriciation for those that do it all the time.
Do you remember when you did this? The kids built a fort with windows and doors and love the entertainment of "the box" I don't need to buy christmas presents this year, I will just take all the boxes from everyone else.

Homemade Samoas Cookies

I found this recipe from another fellow blogger (thanks Kelsey) and thought I would post it. These are yummy.The girl scout cookies.
Homemade Samoas (a.k.a. Caramel de-Lites)Cookies

1 cup butter, soft

1/2 cup sugar

2 cups all purpose flour

1/4 tsp baking powder

1/2 tsp salt

1/2 tsp vanilla extract

up to 2 tbsp milk

Preheat oven to 350F.In a large mixing bowl, cream together butter and sugar. Mix in flour, baking powder and salt at a low speed, followed by the vanilla and milk, adding in the milk as needed to make the dough come together without being sticky (it’s possible you might not need to add milk at all). The dough should come together into a soft, not-too-sticky ball. Add in a bit of extra flour if your dough is very sticky.Roll the dough (working in two or three batches) out between pieces of wax paper to about 1/4-inch thickness (or slightly less) and use a 1 1/2-inch cookie cutter to make rounds. Place on a parchment lined baking sheet and use a knife, or the end of a wide straw, to cut a smaller center hole. Repeat with remaining dough. Alternatively, use scant tablespoons of dough and press into an even layer in a mini donut pan to form the rounds.Bake cookies for 10-12 minutes, until bottoms are lightly browned and cookies are set. If using a mini donut pan, bake for only about 10 minutes, until edges are light gold.Cool for a few minutes on the baking sheet then transfer to a wire rack to cool completely.
Topping3 cups shredded coconut (sweetened or unsweetened)12-oz good-quality chewy caramels1/4 tsp salt3 tbsp milk8 oz. dark or semisweet chocolate (chocolate chips are ok)
Preheat oven to 300. Spread coconut evenly on a parchment-lined baking sheet (preferably one with sides) and toast 20 minutes, stirring every 5 minutes, until coconut is golden. Cool on baking sheet, stirring occasionally. Set aside.
Unwrap the caramels and place in a large microwave-safe bowl with milk and salt. Cook on high for 3-4 minutes, stopping to stir a few times to help the caramel melt. When smooth, fold in toasted coconut with a spatula.Using the spatula or a small offset spatula, spread topping on cooled cookies, using about 2-3 tsp per cookie. Reheat caramel for a few seconds in the microwave if it gets too firm to work with.
While topping sets up, melt chocolate in a small bowl. Heat on high in the microwave in 45 second intervals, stirring thoroughly to prevent scorching. Dip the base of each cookie into the chocolate and place on a clean piece of parchment paper. Transfer all remaining chocolate (or melt a bit of additional chocolate, if necessary) into a piping bag or a ziplock bag with the corner snipped off and drizzle finished cookies with chocolate.Let chocolate set completely before storing in an airtight container.
Makes about 3 1/2-4 dozen cookies.

SKI SWAP

Man, Is it just me or does your computer CAUSE you stress? I can't figure it out...one day it is quick to post pictures, the other it is completely impossible telling me there is something wrong with my connection. So, I can only post these 2 picts...
On Saturday, we ventured out at 9am to the big Ski Swap at Centinial Hall. It is where anyone can Sell used/new items for the winter season in a very organized way. However, it is so popular, I hear some people camped out to be the first in. When we got there, the line wraped around the building to almost the next block! I THOUGHT I WOULD NEVER GET IN.

HOWEVER, the second the building opened, everyone rushes in and the line moved very quickly. I didn't know where to begin. It was like a black friday and everyone rushing! I held on tight to my kids, tolk a deep breath, and found the kids ski table. To my surprise, someone I had no connection, had a 41/2 year old and they were extremely smart, grabbed 2 of each item for their daughter. I SNAGED WHAT EVER THEY DIDN'T WANT. The ski's were 5.00, but the boots were 67.00. Still, not a bad deal. Right off the bat, we came across Treys snowboard...it seemed like it had a beam shinning down on it which helped my sanity. It was the perfect size so we grabbed it and Ran...The hard part seemed like it was over but then I ask:
What happens when you open the doors and let everyone in at the same time?
15 minutes later, the checkout line wraps around the building! Oh great...now Morgan has to go to the bathroom too! What do I do? I don't want to loose my spot in this ever growing line but I definately don't want her to pee her pants. Soo.....me being a struggling Mother asked the lady in front of me to help hold my merchandise and Trey held our spot! Trey saves the day!


It didn't turn out too bad. I also got a helmet, a coat, and Trey some boarding pants and the total was 178.00. Can't beat it.

The forced Family Photo

This was no easy task to get everyone happy and smiling for a family photo at the spir of the momment. Finally, I got the camera all ready and Mattie was crying...of course.
So, I sweet talked her into fruit snacks and 4 pictures later, here it is. Not the best but hey, it will work. I look like an ostridge but oh well. I also had to throw in this picture. I was getting Mattie dressed this morning and went to throw her dirty diaper in the trash. When I returned, she had made a dash for the couch and was looking for Duke out the window! Good thing I have my camera close by.


Tuesday, November 11

Marriage...a commitment made between 2 people to love and cherish each other until the day you die...or eternity. What happens when the cherish part disappears or becomes opaque and you don't feel cherished any longer.

What happens when your spouse no longer cares how your day went? You just pass each other in the hall and the only time you touch is in bed? Is that when you decide you need marriage counseling because, something isn't right. Or is that when you need a break.
A break from Life. A break from the stresses your job and surrounding put on you and create you to become blinded. A break to re-connect.

I woke up in the middle of the night last night with this dream. It wasn't a bad dream, it was a dream about me...singing the national anthem at the top of my lungs on the back of a pick-up truck with a microphone. It was almost like a country parade. I sang it from my heart with every bit of strength that I had. And afterwards, I woke up...my blood was pumping and adrenaline going through my body. It felt so real. And then I realized, I hadn't got on a stage and sang since I was a little girl. Then I got thinking why would I have this dream?

I believe I had this dream because I don't think my husband knows me. He knows me as a mother, but not as a person. I love doing silly things. I love to dance and sing. I love to fly to a city to experience the world. I don't like to watch that much tv because it is boring. I love photography and at times, I look for help.

Yes, marriage is hard and I probably wont be able to leave this post up very long because I don't want to offend. I want to break through this hard spot, lack of communication. That is what we all want to do in marriage, and it takes 2...to love and cherish until the day you die.

This is what I will do.

IN 2005, ANDY WORKED A JOB AT SNOWBIRD, UTAH BUILDING THIS TUNNEL. THE JOB WAS TO PUNCH A 600 FOOT HOLE THROUGH THE MOUNTAIN IN 2.5 MONTHS. HERE IS A VIDEO OF THE FINISHED PRODUCT. THE FIRST IN THE WORLD. CHECK IT OUT. IM SO PROUD TO BE A MINERS WIFE.

T'WAS THE NIGHT BEFORE ELECTIONS

'Twas the night before elections
And all through the town
Tempers were flaring
Emotions all up and down!

I, in my bathrobe
With a cat in my lap
Had cut off the TV
Tired of political crap.

When all of a sudden
There arose such a noise
I peered out of my window
Saw Obama and his boys

They had come for my wallet
They wanted my pay
To give to the others
Who had not worked a day!

He snatched up my money
And quick as a wink
Jumped back on his bandwagon
As I gagged from the stink

He then rallied his henchmen
Who were pulling his cart
I could tell they were out
To tear my country apart!

'On Fannie, on Freddie,
On Biden and Ayers!
On Acorn, On Pelosi'
He screamed at the pairs!

They took off for his cause
And as he flew out of sight
I heard him laugh at the nation
Who wouldn't stand up and fight!

THE TRICK-OR-TREATING

The night started out at 4:45pm when the kids couldn't wait to nock on the doors and yell "Trick-or-treat!" Trey and Cristopher were much faster than us girls, but the fun never stopped. Morgan smiled at everyone and said "Happy Halloween" every time it came to leave and venture onto a new home. I love the grandmas that you can tell, it makes their days go by so much better to see a cute little child enjoying halloween.

Mattie was quite, but very observant. She held tight to her bucket, and was very determined to walk the whole way.I don't know what she planned on doing at this house. Maybe exchanging buckets?? Or maybe she just wants them to fill hers up. She was the cutest little kitten.

One stop along the way, they tolk a picture for me on our adventure. Ok, now you see the person behind the camera...yes, I am dressed in a costume. I'm a prisoner from the phych ward..Doesn't that fit my personality.
Now onto the Trunk-or-Treat!!!!
Preparing for the Trunk-or Treat was a blast! I was incharge of the chili cook-off booth at the Trunk-or-Treat. I got there at 2pm and set it up so it would be ready at 6pm.For you that don't know what a TRUNK-OR-TREAT- IS, it's where everyone goes, parks their vehicles, decorates their trunks and hands out candy from their vehicle.
I have never attended a trunk-or-treat so I didn't really know what to expect...as I wen't to pull into the parking lot at 6pm, the lot was so full, people were parking on the road! There must have been 150 people there! I was so anxious to get to my booth and hand out candy. However, other people got there before me and started dropping their chili off.Now this would be fine, if I would have planned it this way, but the plan was "serve out of the back of your vehicle" Now, my booth, had about 50 people in line to try the chili. IT TURNED A DIFFERENT DIRECTION THAN PLANNED, BUT WHEN LIFE GIVES YOU LEMONS, YOU MAKE LEMONADE. So, it was a hit! I was very pleased.

Dad and Mattie exploring all the candy options. I don't think Mattie really realized what was actually getting put into the buckets. So, at the end of the night, I reached in and pulled out a sucker to had to her. She got so excited and since then, I have seen her sneaking into the bucket of candy...even HIDING! She caught on really fast.
What a great halloween! This is what a family is all about and creating memmories that last a lifetime. It was a lot of work to prepare for a fun event, but in the end, it leaves a bucket full of treats.

THE GREAT PUMPKIN

This is a big halloween tradition in the world...carving pumpkins. It is an adventure every year because the kids grow, and so do their creative abilities.

Andy, Morgan, and Mattie were partners on their pumpkin. He soon discovered that carving wasn't an easy task. He chose a patern that was a level 3, which required a lot of patients...which my husband has none. But, after he got started, there was no turning back.Trey, on the other hand, chose the more traditional approach and drawing by hand. This allowed him to do most of the work himself instead of watching. I think this is the first year he completed the pumpkin completely solo. He had a hard time understanding what you cut out isn't the part you see, it is what is left on the pumpkin that you see. So, at first it had razer sharp teeth, but was left with a huge smile!.Here the boys are examineing their finished product and looking to see what can be improved. PERFECTIONISTS.Mattie and her first experience. Pretty much all she did was watch, but she had to be straped into her chair.The Great Pumpkin of 2008...and it's creaters!

4 year olds GONE WILD

WHAT IS A PRESCHOOL PLAYGROUP? It's a time that you can drop off your kids and have some personal time...with your husband. Well, as explained on Desparate Housewives. But here in the real world, we more or less probably clean house or do our grocery shopping.
Wednesday, we had a wild bunch...getting ready mentally for halloween. You have to know what it consists of: costumes, pumpkins, trick or treat bags, and scary monsters. Then, cookies! We frosted cookies to take home. All the creative work put into it.
