ARE YOU PREPARED?

I watched this video today on this fight that broke out at a GM dealership because the business was closing. I find it very sad and hard to watch as hard working men are so angry that they are going after each other. but also sad because I think it is just the beginning.
We have hard times ahead of us, but the good news is it isn't here for all of us yet. We need to start preparing for hard times and have a plan.
I once heard this saying "If you fail to plan, you plan to fail" If your family was in trouble tomorrow, what could you do today to handle it a little better?
Lets go back to the basics of what do we need to survive? FOOD, SHELTER, AND WATER RIGHT?
I say, stock up on cigarettes. Totally joking. But seriously, we should all get a little more food that is non parish able and cans. Also start a savings. Some of you don't have one, that is why I say START a savings. This can help us with our shelter needs and food. WATER depending on where you live, is something you may be able to find or not. INVEST in a water purifier or some large drums, for long term.
There are a lot of things you can do. We all hope it doesn't happen to us, but look what is happening in Detroit. It is really sad. Just to think, all these people are about to lose everything unless they were prepared. It's a shame.

MARCH OCEAN

It was amazing. Around 2pm, the SUN GOT FIXED. It caught everyone by surprise. It was still hard to get everyone off of the PlayStation...I hate the PlayStation. But, after pulling some teeth, we all headed out and the first thing that happened...the kids streched there arms like a bear emerging from it's den and realized they were standing outside...and not freezing.

The bicycle gang was outside in full force.


We were headed to the beach to let the dog run. The drive to the beach was just beautiful. You could see every mountaintop capped with snow and the mystical clouds topping them. Then you look at the water as the sun glistens and the reflection spreds over the whole ocean.
He has only been out of the yard 2 times, because he is only 7 months old and it has been winter. Andy threw him in the back of the truck. Duke was found standing on the edge of the of the truck, barking at people/cars as we where driving by. I thought he was going to jump out. He did fall out at one point and got hurt enough that I hope he doesn't do it again.I was impressed that the dog is only 7 months and he fetches like a professional. The hardest part was when another dog showed up and Duke wanted to play with the other dog. He gets excited but other people here find it annoying. He is still a good dog, we just need to move somewhere where there is more than one place to take the dog.
The kids had a good time collecting rocks, throwing rocks, and playing in the water.
Trey loves rocks. He is trying to start a rock collection right now. I should get him a cool box to put them all in.

I wished everyday could be as relaxing as this and to be honest, this is one of THE BEST things about Juneau...getting to the beach on nice days. It is very relaxing and soothing to the sole. This is why a lot of people want to get away on vacation...and go to a beach.

Enjoy the changing of the seasons and appreciate the simplicity of life.

HONESTY GOT ME NO WHERE

I believe the first day of spring is something to celebrate. The changing of the seasons is a joyous moment. The snow starts to melt and leave little streams flowing everywhere, the sun shines on the mountainsides, and you start to see human life in the outside world.
Today, the day started out like any other Saturday, cleaning house and getting errands ran. My first stop was to Sears to return a vacuum that I had for 2 months and was already having problems. The manager said since it wasn't technically broken however, they would have to charge me a "restocking fee" of 20%. I could have been dishonest and say it was broken. But I can't.
Then my next stop was the nugget Mall and as I was pulling in, I looked back and saw red and blues. I couldn't believe it and to top it off, there was no where to park...so the cop followed me through all the rows and at one point he even turned on his siren. IT WAS SO EMBARRASSING. Well, I did finally find a parking spot and he says "I pulled you over for no seat belt." I looked down and sure enough, it was tucked in next to the door like it has never been used...there was no way out of it. He even asked me why I didn't have it on....but is there really any GOOD reason?
So, I was completely honest with the cop and I said "you know, I hardly ever wear my seat belt. but I do require ever one else in my vehicle to." I still got a ticket...I guess I deserved it but it still stinks. Andy gave me a hard time about it.
Last stop was Fred Meyers to return some jeans. I had the receipt which was about a mile long. At the bottom of the receipt was a 10.00 reward and since the jeans where the most expensive item on the receipt, they deducted the reward from my refund. WHAT A RIP! I could have came in without my receipt and got a full refund...but, I didn't.
SOMETIMES, IT SEEMS SO EASY TO BE DISHONEST. Today I could have saved myself a lot of money and actually, I think these companies need to change there policies and that policemen shouldn't be able to give you a seat belt ticket unless you are doing something wrong. I mean, who cares if I'm wearing my seat belt. The only person I am hurting is myself...but really I'm not hurting myself because I am superwoman. JK.

The Blind Date

Have you ever had a friend and you want your husband to be friends with their husband?
Well, yesterday I had the privilege of having the Willis's over for dinner. My true intentions of this dinner was, yes friendship...but more to get the husbands together. You see, they have met, but never hung out and chatted. More, I want them to plan a day out together... and go hunting. What wife would say that? Me. That is who. I have seen the happiness hunting gives to my husband, just to be in the outdoors, and live with the wild beasts of nature...but since all my husband does is WORK...he has little outdoor buddies here in Juneau.
SO THE FIRST QUESTION I ASK ANDY when the company leaves is... "So....what did you think? Of Ruben? huh? Did you plan a date for the hunt?"
Well, the guys talked about hunting the whole time they were there they planned another date to set up the reloading station. Men.
No marriage date...I mean hunting date set yet but it is in the works.

SMOKED PORKLOIN DRAPED IN BACON

We LOVE to cook good food and especially meat. Over the years I have become a smoker.. why? The smoker leaves the meat with a rustic,woodsy flavor. If you don't have a smoker, you can do everything the same right in your own kitchen oven.

HERE IS HOW TO MAKE/PREPARE THE BEST PORK TENDERLOIN YOU HAVE EVER HAD.

STEP 1- 3 pound pork loin roast. Clean and dry your meat.

Step 2- The INJECTION.

Ingredients
1 stick unsalted butter
1 1/2 cup regular beer (1 beer)
1 Tsp. ground cayenne pepper
1 Tsp. garlic powder
1 Tsp. paprika
1 Tsp. salt

In a small saucepan, melt the butter over medium heat. Add the beer and spices and whisk together. Heat just to simmering, then remove from heat and let cool before injection. Using a flavor-injection syringe, inject the Beer and Butter sauce into the pork loin all over. I must have injected it in nearly 50 places. This is going to make your meat TENDER AND JUICY. Step 2-completeSTEP 3- INGREDIENTS
1/2 Cup your favorite BBQ sauce
1/3 Cup Dijon mustard
Mix and spread over the meat.
STEP 4-The SWEET AND SPICY BBQ RUB
Ingredients
1/4 cup brown sugar
1/2 cup white sugar
1/4 cup salt
2 TBSP chili powder
2 Tsp. ground cayenne pepper
1 TBSP garlic powder
1 Tsp ground cumin
Mix all ingredients well. This rub is universal and can be used on ribs, brisket, and pork roasts.The mixture should look uniform in color and texture.Coat the loin with the rub, using all of it.
Step 5- Wrap in saran wrap and refrigerate. This will give the flavors a chance to penetrate.

READY TO COOK? Remove the loin from the fridge and let rest for 30 minutes. Prepare your smoker for smoking with your choice of smoking wood. I used mesquite.If using an oven, follow the same instructions with out the wood.
Place the loin in the smoker/oven and drape with the bacon. This will help keep the loin moist and flavorful. Smoke/cook the loin for about 4 hours at around 200 degrees. Baste every half-hour with the apple juice.
Remove from the smoker/oven when the interior temperature of the loin reaches 145 degrees. Wrap tightly in foil and let rest for 30 minutes to an hour before slicing and serving.


ENJOY. IT IS THE BEST

TIP 1-Buy a pork tenderloin and have the butcher in the store fold it/tie it. They will gladly do this for you.

Tip 2- If you see a tenderloin on sale but it looks extremely large (the size scared me away at first), the butcher will cut it down into 3rds and package it. This CAN give you 2/3 separate pork tenderloin for future use.

Babysitting

Watching other families kids is an adventure. After every day, you are exhausted and just want to rest and not listen to another complaint about how boring life is or that your brother just said something like "boogers" to you. Today is day 3 of spring break, and I have volunteered my services to watch 3 extra kids during this week.

Today is Wednesday, and with 6 kids, 7:45am-5pm, I am ready for a "spring break." It is a lot of work. Here is what it is. You have to SCHEDULE out your day and fill them with activities, then with 2 toddlers you have to CHASE them out of rooms they aren't allowed in, and last try to keep kids QUIET while Andy is sleeping. I am doing so much running, that now...
I am exhausted! THIS IS A LOT OF WORK. Maybe I am a whiner, I don't know but honestly, I don't know how people do it day in, and day out...and keep there sanity.

Family History

I had the privillege of speeking in church on Sunday to the whole congregation about the importance of family history. What an experience and a journey to beable to learn and teach at the same time. Here is a little tidbit of the talk but for the whole talk click here.

Here is a story I would like to share with you about my grandfather. Herschel Lloyd was born on a wintry day, much like today, in 1922. On this day, Babe Ruth signs a 3 year contract with New York Yankees at $52,000.

He grew up on a wheat and cattle ranch. He was the oldest son, who took care of his 5 brothers and sisters. During the 30’s, times were very tough and Herschel was grateful to receive a used pencil or a large marble for Christmas. As he grew older, life brought him to WSU where he received his degree in agriculture.

When He got into his early 20’s he enlisted in the US Army because the freedom of our Country was precious to him. In WW2 he fought and finished his service being present in Okinawa at the time of the signing of the treaty.

During his 28th year he had a life changing moment…He met “the Stinson family from “the Pasco ward”, (which I know very well to this day),liked their beliefs and living standards, and was baptized a member of the church of Jesus Christ of Latter-Day saints. As his spirit rapidly grew, Herschel was ordained an elder, called as a stake missionary, and was an outstanding Scout Master always going the extra mile. At one point he acquired a large boat which his troop helped fix up, and then they were able to take trips down the Columbia River and go camping on this island… now named Herschel Island. Other church callings he had included Welfare Services, Stake and ward Clerk, and Temple Ordinance Worker.

What a life to have…it just leaves me feeling peace and hope for my future.

To start off Another name for family history is Genealogy, Genealogy is The study or investigation of ancestry and family histories.

So, The first question I want to ask is? Can I see a show of hands who has someone doing their geneology for them? Ok, I understand, we all have different things in our lives but I am hopeing I can motivate each one of us to do family history. A couple different motivational reasons would be:
1-You want to know who your relatives are: This May be triggered by when a family member has passed away and because of this, you gain an interest. You can get the most information from a current relative that is alive if you search their attics or just simply ask questions. Or imagine you have a grandmother that has given you a huge suitcase full of papers with information from people in your family. You have no idea who any of these people are but you now have this suitcase.

2.genetic background. This is one thing that got me thinking. Why am I the way I am? I’ll tell ya, everything started falling into place when I started thinking of my family background genetically. There are a lot of traits that I possess that have been passed on from generation to generation. The love for the outdoors, artistic abilities, hard working, and overall healthy. Other families might have great leadership skills or genius minds. There is also another side that is built into a lot of families like addiction, health related issues, alcoholism… its in our past and it will unfortunately be in our future. I have a lot of alcoholism on my moms side of the family, and I know it runs in my blood. I know addiction runs in my blood… and to have this knowledge helps me to better understand myself. I know with the church and scriptures to guide me I have tools that help me to resist. But by educating myself with the family history and teaching my children, I can understand my strengths and my weeknesses.

1st Dance Clinic

I want to thank my friend Sara Pierce for showing me the paper last night with news that JDHS dance team was holding a clinic for kids. So, I was up and got Morgan all ready. By 7:30am, we were out the door.
The clinic was a couple of hours and then they performed for family. Here is a video and some pictures of her first dance clinic. I'm SOOO proud of my little girl who is growing up sooooo fast...
She saw me right before the show and had to come and give me a big hug. I think she was excited to see me.
She was the smallest out of all the kids present.

She is really trying to do all the moves. She has never danced before. I believe you should wait until they are 5 because then they have a better mental level.Good Job Morgan. I cried when I watched her dance. It just brings back so many memmories of my mom and dad watching me through all my talent shows and dance competitions and now...it's the start of my own generation. To beable to see my children gain their own identity and passions, is one of the perks of being a mom.

Lifes Precious Momments

I caught a couple momments on camera today that I concider precious. They make us feel awwe in everyway possible.The first signs of spring...sun and heat. It gives me hope that it wont be frozen forever. Bald Eagles flying...more like sauring through the air. Soaking in the suns heat with their feathered wings streched out as far as they can go.
And a baby that was so tired, she crawled up in bed with dad...and fell fast asleep. Awe...

All About Me


Hello, My name is Bethany. Welcome to my blog!
I have lived in Juneau Alaska for ALMOST 3 years now and it has been a good experience, one I will always remember. I have grown alot since I have lived here and gained alot of good friendships. I grew up in Tri-Cities, Washington...the Pasco side. I have 3 sisters and 2 brothers which of all are married except Jordan which just graduated high school.
When I turned 22, I figured I needed a change in life. So, I packed up my 1990 Honda Accord and drove to Elko, NV. There wasn't much there, except a lot of mining. I fortunately got a job as an underground dispatcher for the company, Newmont Gold. What an experience...sitting at a desk all day long and talking to men. Who could ask for more as a single girl? Needless to say, I met my future husband, the first guy I went out on a date with in Nevada. Good thing he turned out to not be a "typical miner." I got married in 2004 in a small town called Lamoille, NV. It was a beautiful wedding. Then, I didn't realize how big of a hunter he was, so we had to move to Juneau, Ak where we are now.

BALLROOM DANCING

I COULDN'T WAIT UNTIL TREY WAS IN 3RD GRADE BECAUSE THEN I GET TO GO WATCH HIM DO BALLROOM DANCING. Today was the day...the day they performed infront of the whole school and I almost missed it!! I showed up right when they were halfway through the performance and I seriously felt bad! But I raced in and pulled out my camera just in time to catch him on film. It was soooooo cute.
Of course, He gets teamed up with the tallest girl in the 3rd grade. Thats what we get for being absent for 2 weeks on vacation. But it looks like he is doing ok...I say ok because really there are very few white boys that can dance and as long as Treys feet were moving left and right...he was doing ok.
I believe Trey looks pretty small in this picture...

WENDYS CHILI RECIPE


THIS IS MY FAVORITE CHILI RECIPE AND IT TURNS OUT WONDERFULLY. IT IS VERY SIMILAR TO WENDYS RESTAURANT CHILI BUT MAKES A LOT. KEEP IN MIND WHEN MAKING THIS THAT YOU CAN POUR THE LEFTOVERS IN A ZIPLOCK BAG AND FREEZE IT FOR ANOTHER DAY. CHECK IT OUT.


Beths FAMOUS Chili (someday)

2 Pds. browned beef
29oz. can tomatoe sauce
29oz. can kidney beans
29oz. can pinto beans (or fresh,soaked pinto beans that are soft)
1 Cup Onion
1/2 c. green chillis
1/4 c. celery
3 medium tomatoes or 1 large can of diced tomatoes
2 tsp. cumin
3 tbsp. chili powder
1 1/2 tsp. black pepper
2 tsp. salt
2 cups water


Add all ingredients to a crock pot in order. Stir. Cook in crockpot on high for 4 hours or low for 5-6. Everything is cooked after 3 hours but the longer it simmers, the better the flavor with the spices.
Serve over baked potatoes, hotdogs, pasta noodles, or the traditional way I like it...just in a bowl with cheese and sour cream....mmmmmm.

DELICIOUS Ham and Potato Soup

How do you like my new header??! Thanks to my very talented sister Karrie, I am able to have a beautiful custom header and blog! Thanks Karrie, you are the best and have always inspired my creativity. I remember when you put together that genealogy book for us one Christmas with photos of ancestors dating back through the 1800's. And also that whole itinerary you planned for our family vacation in 1998. You are truly talented and for your gift, I thank you.

So, to show my appreciation I am giving you all a little bit of my talent of cooking by sharing my ham and potato Soup recipe. It is the PERFECT flavor, texture, and on a cold night, it fills the tummy.

HAM AND POTATO SOUP
3 1/2 C. diced potatoes
1/3 C. diced celery
1/3 C. chopped onion
3/4 C. cooked ham
2 TBSP chicken bouillon or 4 cubes
water

1.Combine the potatoes, celery, onion, ham, and water in a stockpot. Add enough water to cover and simmer until barely tender. Add chicken bouillon In the meantime, continue on with part 2 of the recipe.

1 Quart half-and-half (or see below for other substitutes)
3/4 C. flour
1 stick of butter
1 1/2 tsp. salt and pepper to taste
2 TBSP. Red Wine Vinegar

2.Pour milk in the blender with the flour and blend (or use a whisk). Pour milk in a sauce pan, add butter and slowly bring to a boil, stirring slowly. It will be done when thickened. Add salt/pepper.

3.Stir the milk mixture into the stockpot, and red wine vinegar (optional), and cook soup until heated through. Serve immediately. Top with cheddar cheese.

*other substitues:1 can evaporated milk and enough regular milk (even powdered milk...I use it all the time...to use it up...and it tastes just as good) to make 1 quart.

SPRING TRAINING

Last day in Phoenix. Andy had left to go back to work and the kids and I had a free day. No plans. At the last minute I decided it would be a lot of fun to go to a major league baseball game before we left and Phoenix is one of the 2 locations for Spring Training. All the major league teams go to Phoenix at this time of the year and there are games daily.

We went to the SF Giants VS Japan game. What a neat opportunity it was to take the kids to the game. It was about 82 deg. outside and not a cloud in the sky. !

The ticket counter in the big city of Scottsdale. There were people from all over the world. We sat on the grass behind the field and a home run ball got hit about 5 yards away from us...SO CLOSE!I enjoyed watching Trey at the game. When he was younger, Trey and I would spend almost every Saturday at the Tri-City Dust Devils Stadium in Pasco. He has always had a love for the sport.Mattie found her second love...Slurpies! With the sun so hot, every single child had a slurpie and I felt like an ice cold lemonaide. Mattie had also learned on this trip that kids wrestle. It is bound to happen with a house full of boys. but she carried it with her to the game and would walk up to guys sitting down and hit them/run. They all thought it was the cutest thing.Way back by that sign was where we were sitting...long ways back. We all got up to get a closer look at all the star players. Plus the kids were sweeting and turning pink. It was really warm.Fatigue was setting in halfway through the game. They were beat from the heat, full of vitamin D, and exhausted from all the travel. It was a great way to finish off our vacation.
It just reminded me of how greatful I am for the opportunity to Travel all the way across the country with my family and enjoy the little things life...LET ME REPEAT....LIFE brings. There are alot of things we can do in life. So many opportunities, chances, and changes that it offers if we just look around. I know my life isn't going to be forever, so why not live like it is your last.

BACK TO BAGDAD

Something dirt roads, rock piles, and family around that brings out the kid in all of us. Our trip to Bagdad was one of the most enjoyable parts of our trip. This is where Andy had spent all his childhood growing up. Here is our adventure to Bagdad.The first stop was to....you guessed it. Cabelas, the best store in the world for outdoor enthusiasts. Its like a theme park for hunters and fishers alike. They even have a restaurant that served buffalo burgers and venison brats.that evening we went to the coral and fed the horses and got the opportunity to ride them. Andy was the man in charge giving the kids the chance to ride solo. This horses name was Spirit.Soon after, Andy walked us all up this hill to find his childhood fort. As he made our way through all the cactus, there it was. A huge boulder pile with cracks and crevices. It entertained the kids for a while and then they all decided...they didn't want to leave Bagdad.
Tiffany, Jeff, Lexi, Brighton, Haylee, Morgan, Trey, Andy, and I stop to take a shot as my batteries flashed that they were dieing. This is the top of the boulder pile overlooking the town of Bagdad.


In the evenings, we all gathered around for dinner at Papa Troys.


4 wheeling and Guns- I wish I had a 4 wheeler. Someday. We borrowed a couple and took off on the dirt roads. There are so many different ways you could go. I had no idea where we were, but Andy knew exactly were we were...in the middle of no where. That is what he loves.



We stopped and set up a target, taking turns firing the 22 caliber and the others. I really like shooting guns. So much power and to hit the target makes you feel like you should get the stamp of approval from your addicted hunter of a husband.

The best part of the whole trip to Bagdad? Spending time with the Murrays. It seems like yesterday they were here in Juneau with us and they haven't changed...just grown a little. I miss them so much and all the good times we have shared together.

CLOSING GAME OF BASKETBALL SEASON

TODAY WAS THE LAST DAY OF BASKETBALL SEASON AND I GOT THE OPPORTUNITY TO TAKE THE TEAM PICTURES. WHAT IS DIFFERENT ABOUT ME IS I AM KINDA OLD SCHOOL...TAKING PICTURES IN THERE NATURAL SUROUNDINGS. I LOVE THE GYM AS THE BACKGROUND BECAUSE IT IS WHERE WE PLAYED ALL WINTER LONG. THEY ARE SO HAPPY IT IS THE END OF THE SEASON AND BETH DOBSON DID SUCH A GREAT JOB COACHING.
